Mario Romero Santos
The MainCourse Restaurant in Ramona, known for it’s fresh and flavorful food and welcoming atmosphere, boasts Mario Romero Santos, Chef de Cuisine. Born in Mexico City, Mario loved to cook alongside his mother as a child. In her passing, he continues to keep her recipes alive holding on to all that she taught him about food and table.
After studying at the University of the Cloister of Sor Juan, Mario moved to San Diego in 2002 where he worked at many restaurants including La Fontana, Miami Grille, Capri Blu, and Rancho Bernardo Inn; as pastry chef at Dolce Italia; and as the Chef de Partie at the Rancho Bernardo Inn. Cuban, Chinese, Mexican, Italian, and American are just a few of the diverse array of cuisine in which Mario specializes.
